Servings 2 Family Portions
Equipment
- 1 Blender
- 1 Air Tight Container / Jar
Ingredients
- 1 cup Natural Cashews
- 1 cup Fresh Coriander Sub rocket or other fav herb, if your a hater
- 1/2 Avocado *optional
- Juice of half a lemon
- 1 tsp Sea Fine Salt
- 1 tsp Cracked Pepper
- 1/2 tsp Chilli flakes or fresh chilli *optional
- 1/2 cup Filtered water to loosen as needed
Instructions
- Soak cashews in boiling water for ten minutes. Prep other ingredients whilst they are soaking.
- Place coriander, avocado, lemon juice, and seasonings into your blender bowl.
- Drain & Rinse cashews and add them to the blender.
- Blend until smooth. Add water in small increments until you achieve your desired consistency, more water will result in more runny dressing, less water will result in a thicker consistency
Notes
- This recipe will keep in the fridge for up to a week in an airtight container or jar
- I like to keep the consistency on the thicker side so you can use half as a dip and the other half as a dressing, for those who have trouble with decisions or just want the best of both worlds
- If you are a coriander hater, that's okay. Simply replace the coriander with rocket or experiment with whatever other herbs you have growing in the garden.
- Feel free to add in other spices that compliment your chosen herbs too.
